Gluten Free Dairy Free Chicken Sausage Stir Fry

Very very very simple to make and it's delicious! I finally was able to use my new wok pan. Enjoy!


Ingredients


1-2 tablespoons of coconut oil

Red cabbage, chopped

Red onion, diced
Kale, chopped
Chicken sausages, sliced (I used Al Fresco-roasted garlic chicken sausage)
Carrots, diced

Spinach, choppedSalt
Pepper

Directions

1. Heat coconut oil in a skillet over medium heat
2. Add red cabbage, red onion, kale, spinach, and carrots and saute until tender
3. Add chicken sausage, salt and pepper, continuing to cook until chicken sausage is heated through

Healthier General Tso’s Chicken

Soooooo good! I'm super full from eating so much of it. It bakes really fast, however, the preparation takes a bit of time. I definitely will be making this again!

Ingredients 

boneless, skinless, chicken breasts (cut into chucks or cubes)
1/4 cup all-purpose flour
2 large eggs
Corn Flakes
Sesame seeds

Sauce
1 1/2 cups chicken broth 

1/2 cup hoisin sauce
1/4 cup rice vinegar
3 tablespoons soy sauce
3 tablespoon brown sugar
2 tablespoons cornstarch

Directions 

1. Preheat oven to 450 degrees. Place tin foil on a baking pan and spray with olive oil
2. Working in batches, dredge chicken in flour, dip into eggs, then dredge in crushed Corn Flakes. Make sure each piece is coated
3. Place chicken onto baking sheet and place into the oven 
4. Bake until golden brown and crisp, about 13-15 minutes
5. In a large saucepan over medium-high heat, combine chicken broth, hoisin sauce, rice vinegar, soy sauce, brown sugar and cornstarch until thickened, about 1-2 minutes
6. Stir in chicken and gently toss to combine
7. Place in a large dish or bowl and sprinkle with sesame seeds7. Serve and enjoy
