3 Ingredient Breakfast Skillet

At first I thought this was an interesting combination but after tasting it, I found it to be quite delicious! It is very fast and easy to make. And I love breakfast food for dinner.


Ingredients

1 Pound of ground turkey
1 Cup of salsa of choice
4 Organic eggs (Or more)

Directions

1. Grease skillet and place turkey into it and cook until turkey browns
2. Add in salsa and mix to combine, let cook together for 2-3 minutes
3. Crack in eggs and cover skillet for 7 minutes or until egg whites are opaque

Homemade Hamburger Helper Cheeseburger Macaroni

This was delicious and so much healthier than the store bought one. I had to make two separate ones because I used dairy free cheese for mine. I cannot wait to make this again!

Ingredients

1 1/4 Pounds of ground turkey (You can use beef)
3 Cups of coconut milk (Or milk of choice)
1 3/4 Cups of gluten free macaroni (Whole wheat or regular all work)
1 Tablespoon of cornstarch
2 Teaspoons of paprika
1 1/2 Teaspoons of garlic powder
1 1/4 Teaspoons of onion powder
1/2 – 1 Teaspoon of salt 
1 1/4 Cup of cheddar cheese, shredded (I used daiya dairy free cheddar for mine)

Directions

1. In a large frying pan, cook the meat until almost browned. If there's a lot of liquid, drain it 
2. Add the rest of the ingredients to the pan, except for the cheddar cheese, and stir until well combined
3. Cover with a lid and simmer for 10-20 minutes, stirring occasionally
4. Stir in the cheese until well mixed in. If you want it thicker let is cook for about 5 minutes while stirring

Honey Mustard Chicken Wings

These were delicious. I ate them two nights in a row. They are super easy to make and taste great. Next time I will grill them, rather than baking them.

Ingredients

Garlic, minced
2 Tbsp of honey
2 Tbsp of Dijon mustard
1 Tbsp pf gluten free soy sauce
2 Tbsp of lemon juice 
1/4 Cup of olive oil
Salt & pepper
Chicken drumsticks
Cooking spray

Directions

1. Place the chicken in a large bowl or marinade bag
2. Mix together the garlic, honey, mustard, soy sauce, lemon juice, olive oil, salt and pepper and pour over the chicken wing drummettes to coat
3. Chill for at least an hour in the fridge
4. Preheat the oven to 400 degrees
5. Line a pan with foil and spray with cooking spray 
6. Place the chicken wings on the pan with some space between the wings
7. Bake for 25-35 minutes, until cooked through and well browned

Taco Chili

This recipe was good. Would I make it again? Maybe if I needed something easy to make in the crockpot. It wasn't anything spectacular. But it wasn't bad either.

Ingredients

1 lb of cooked ground beef (I used ground turkey)
1 Medium onion, chopped
1 Can of corn, drained
8 Oz can of tomato sauce
2 14oz Cans of diced tomatoes/green chilies
1 Tablespoon of chili powder
¼ Teaspoon of garlic powder
¼ Teaspoon of onion powder
¼ Teaspoon of crushed red pepper flakes
¼ Teaspoon of paprika
1 Teaspoon of ground cumin
1 Teaspoon of sea salt
½ Teaspoon of black pepper

Directions

1. Cook the meat in a frying pan until browned
2. Place the meat and the rest of the ingredients in the crock pot and cook on low for 4-6 hours
3. Serve with shredded cheese, cilantro, chopped green onions, corn chips, or whatever you'd like

Crockpot BBQ Chicken

DELICIOUS! The house smelled amazing while this was cooking. It tasted amazing. I made homemade coleslaw to go with mine and I made my husband mashed potatoes. I will be making this chicken over and over.


Ingredients

4-5 boneless, skinless chicken breasts
1½ Cups of BBQ Sauce (I used Sweet Baby Rays BBQ)
½ Mediu
m onion, chopped
1 Tbsp of olive oil
1 Tbsp of Worcestershire sauce
2 Tbsp of brown sugar

Directions

1. Stir together all sauce ingredients in a slow cooker
2. Add the chicken and turn to coat
3. Cover and cook on high 3-4 hours or on low for 6-7 hours
4. Chicken is done when cooked through and easy to shred
5. Remove chicken to a cutting board and shred each breast using two forks, then place the shredded chicken back in the crock pot and stir to coat with the yummy sauce

Paleo Pizza Eggs

This was easy and delicious. I wasn't sure how pasta sauce was going to taste with eggs, but it works! 


Ingredients

Five or six scrambled eggs
Four to five tablespoons of chopped pepperoni (I used chopped turkey meatballs in mine)
A quarter of an onion, chopped
1 Teaspoon of crushed garlic
1 Teaspoon of dried oregano
1/4 Teaspoon of crushed red pepper
1 Tablespoon of pizza or pasta sauce, plus more for topping
1 Teaspoon of extra virgin olive oil
Fresh rosemary (optional)


Directions

1. Saute the onions and garlic in olive oil over medium heat
2. In a small bowl, combine the eggs and add them to the pan
3. Stir the eggs as they begin to cook and some of the chopped pepperoni, oregano, crushed red pepper, and the tablespoon of pizza sauce
4. When the eggs are cooked to your liking, plate and top with more spoonfuls of pizza sauce, and fresh rosemary or whatever other toppings you would like
