Ingredients
Boneless, skinless chicken breasts, cut into 1-inch pieces
Curry powder (adjust to your taste)
Coconut oil
1 tsp fresh ginger, grated
1 tsp salt
1/4 tsp pepper
2 cloves garlic, minced
1/4 cup chicken stock or broth
2-3 potatoes, chopped
1 cup of canned coconut milk
Directions
1. Season the chopped chicken with salt and pepper and set aside
2. In a large pan, add the coconut oil and heat
3. Add the chopped chicken, curry powder, garlic and ginger to the pan and cook until the chicken is almost cooked through
4. Stir in the chicken stock and mix well
