Ingredients
1 Large onion, finely chopped (I used 1/4 of an onion)
1-2 Garlic cloves, crushed
1 Tsp of coconut oil
1 Tsp of turmeric
1/2 Tsp of coriander, ground
1 Tsp of curry powder
1 Tsp of cumin
1 Tsp of salt
14 Oz can of coconut milk (I used lite)
5.5 Oz can of tomato paste
2 Cups of green lentils, uncooked & rinsed (I used a bit more than 2 cups)
3 Cups of boiling water
Cilantro, chopped
Directions
1. Preheat a dutch oven with coconut oil
2. Add the onion and garlic, cook until golden brown, stirring occasionally
3. Add the turmeric, coriander, curry powder, cumin and salt
4. Cook for another 30 seconds, stirring frequently
5. Add the coconut milk, tomato paste, water, lentils and stir to combine
6. Bring to a boil, cover and cook on low for 45 minutes
7. Remove from heat and let stand 5 minutes
8. Serve hot and garnished with cilantro
