Savory "Pancakes"

This recipe is low sodium, gluten-free, dairy-free and soy-free. I'm not an omelette fan and this didn't taste like one. It didn't taste like scrambled eggs either. It tasted like a crispy stuffed fried egg--almost like a frittata. The original recipe calls for  ground turkey, onions, and green peppers. Instead I used cauliflower and broccoli. I had two with homemade guacamole and the other two with apple butter. It was filling and really good!
Ingredients
2 egg whites, 1 yolk
Cauliflower (chopped very small)
Broccoli (chopped very small)
Black pepper
Butter (I use non-dairy, soy free Earth Balance butter)
Directions
1. In small bowl, whisk eggs until frothy
2. Add cauliflower and broccoli
3. Continue to whisk until eggs and veggies are combined and well blended. Then season with pepper
4. Heat butter in a pan and scoop out small amounts of the mixture and fry until golden brown on each side

Chia Squeeze

These little treats are really good. I like to snack on them when I need something small in between meals. The apple cinnamon is my favorite. You can find them in the produce section of the grocery store.

Hawaiian Sliders w/ Rosemary Garlic Sweet Potato Fries

These were good. I love pineapple and eating things mixed with pineapple. I'm so glad the sweet potato fries came out crispy. Definitely try!





Ingredients

Hawaiian Sliders
Ground pork
Green onions, diced
1 teaspoons ginger, freshly grated (I used ginger paste)
Salt & pepper
Cilantro
2 Tablespoons soy sauce
Pineapple slices 

Sweet Potato Fries
2 large sweet potatoes
Rosemary (grated)
Garlic powder
Black pepper
Olive Oil

Directions


1. Preheat the oven to 400 degrees
2. Cut the sweet potatoes into thick slices
3. In a small bowl, mix together olive oil, garlic, pepper, and rosemary then toss the mixture with the sweet potatoes in a large bowl
4. Place the sweet potatoes on a baking pan (make sure you spread them out). Bake until crispy (about 20 mins)
5. In a large bowl, combine pork, green onions, ginger, salt, pepper, cilantro and soy sauce
6. Form into patties and grill the sliders on a grill or fry them in a frying pan
7. Grill pineapple rings 2 minutes each side and eat with slider

Turkey Meatloaf Parmigiana

I was not that impressed with this recipe. It basically tasted like my turkey meatballs. It was good! But I was hoping for something different. I do still recommend making it---it's filling, tasty, and a good meal for a get together. 


Ingredients

Ground turkey
1 egg
1/2 cup bread crumbs (I used whole wheat)
1 tablespoon of minced garlic
1/2 tsp. onion powder
1 cup marinara or pasta sauce, divided in half
1/2 cup shredded mozzarella cheese (I used dairy-free)
1/2 cup parmesan cheese 
 (I used dairy-free)
Olive oil cooking spray

Directions

1. Preheat oven to 350 degrees. Spray a loaf  pan with cooking spray and set aside
2. In a large bowl combine the ground turkey, egg, bread crumbs, garlic, onion powder, and parmesan cheese. Use your  fingers and hands to mix the ingredients until combined 

3. Add 1/2 cup of the marinara sauce and mix lightly
4. Pour into the greased  pan and top with the remaining 1/2 cup of marinara sauce
5. Bake for 50 minutes then add the mozzarella cheese blend and bake for an additional 10 minutes or until golden brown and bubbly.

Coconut Chicken

I was very curious to make this dish. I wanted coconut chicken but without the coconut flakes. I added pineapple, hoping to have a pina colada flavor and it did. It turned out delicious. I was very pleased!

Ingredients

Boneless, skinless chicken breasts (cubed)
1 cup cornstarch
2 eggs, beaten
1/4 cup canola oil
1 (14 oz.) can coconut milk
3/4 cup sugar
1 tsp cider vinegar

Pineapple chunks


Directions

1. Cut the chicken into cubes (nuggets)
2. Heat oil in a skillet over medium heat and preheat oven to 325˚
3. Dip the chicken in egg, then cornstarch, and fry in the oil until lightly golden brown, but not cooked through. Remove the chicken from the pan and place in a single layer in a baking dish
4. In a medium bowl, whisk together the coconut milk, sugar, and vinegar
5. Pour the sauce over the chicken and bake for about 25-30 minutes, stirring the chicken occasionally
6. Once cooked through, let it stand for at least 5 minutes to allow the sauce to thicken
7. Serve with pineapple chunks

Maple Cornflake Chicken

This chicken was sooooooo good! It is almost addicting. I cannot wait to eat leftovers of it! It was easy to make and does not have many ingredients. ENJOY!!!

Ingredients
Chicken breasts
Cornflakes (crushed)
3 egg whites
1/2 cup of maple syrup
Olive oil cooking spray
Directions
1. Pre-heat oven to 375 degrees prepare a baking pan with tin foil and spray with cooking spray
2. Combine the egg whites and the maple syrup in medium size bowl
3. In another medium size bowl, pour the crushed cereal into it
4. Dip a piece of chicken in the egg white/syrup bowl then dip into the cornflakes and place chicken onto the baking pan. Make sure to pat cereal into the chicken (I added extra cornflakes on top of each piece of chicken.)
5. Cook for 20-30 minutes until chicken is cooked through

Scrambled Eggs

When I'm not feeling too well, I always crave eggs. So I decided to scramble some eggs and eat it with some salsa (not pictured), along with some avocado/sriracha sauce, and roasted potatoes with herbs and garlic. It is a very easy dinner to make and satisfying as well.
