Teriyaki Turkey Bowl

It was very good! You are supposed to add rice, but I'm not a fan so I omitted that. It's a pretty healthy dish and quite delicious.

Ingredients

½ cup GF Low Sodium Soy Sauce
¼ cup water
2 Tablespoons Red Wine Vinegar
2 Tablespoons brown sugar
¼ cup granulated sugar (I omitted this)
2 teaspoons minced garlic
1 teaspoon ground ginger
1 tablespoon cornstarch
2 tablespoons warm water
1 tablespoon olive oil
2 tablespoons minced garlic
1 pound Ground Turkey
1 cup finely chopped broccoli
2 large carrots, peeled and grated
2 green onions, diced, for garnish

Directions

1. Mix soy sauce, ¼ cup water, red wine vinegar, sugars, garlic and ginger in a small saucepan over medium heat. Stir with a whisk until sugar is dissolved
2. In a small bowl, whisk together 2 tablespoons warm water and cornstarch until cornstarch is completely dissolved
3. Heat sauce and slowly whisk in cornstarch mixture and simmer until thickened. Remove from heat and set aside
4. Heat the oil in a large skillet and crumble the ground turkey and garlic into the pan and cook until turkey is about half cooked
5. Add grated the carrots and chopped broccoli and continue to cook until turkey is no longer pink
6. Pour the teriyaki sauce over cooked turkey and vegetable mixture and stir. Let simmer
7. Garnish with green onions

BBQ Sloppy Joe

SUPER SIMPLE to make. I literally made it while holding a screaming baby. It was really yummy too!

Ingredients

1 lb lean ground turkey (or beef)
1/2 cups barbecue sauce
1/4 cup ketchup

Directions

1. Brown meat in a large skillet then drain
2. Add barbecue sauce and ketchup, mix well
3. Cook 5 minutes or until heated through, stirring occasionally

Crispy Italian Chicken

Very easy to make. The original recipe is called for chicken thighs but I used chicken breasts. It is a whole 30 recipe. It's quick, easy, and healthy.

Ingredients

1 lb bone-in chicken thighs (or bone-less chicken breasts)
1 tbsp garlic powder
1 tsp red pepper flakes
1 tsp dried oregano
1 tsp sea salt

Directions

1. Preheat the oven to 425 degrees and line a baking sheet with foil or parchment paper
2.Mix the garlic powder, red pepper flakes, oregano, and salt in a small bowl
3. Place the chicken thighs on the baking sheet and dry the skin well with a paper towel
4. Sprinkle half of the seasonings on each side.
5. Bake about 45 minutes until the thighs are cooked through completely

Thai Spiced Turkey Meatballs

These were supposed to be burgers, but I made them as meatballs because I did not feel like grilling. They turned out delicious. Next time, I will have to try them in burger form.

Ingredients

1 pound ground turkey
1 egg
1 small zucchini, grated
1 red chilli, diced (I omitted)
1 bunch green onions, diced
2 cloves garlic, minced
1 teaspoon ground ginger
1 teaspoon coriander
½ teaspoon sea salt
1-2 tablespoons sesame oil
Coconut oil
Directions

1. Combine all the ingredients except sesame oil in a large bowl, and mix together well using your hands. (However, since I made them as meatballs I added the oil into the mixture.)
2. Form meatballs 
3. Heat the coconut oil in a frying pan and fry the meatballs for 5-10 minutes on each side or until cooked through

Homemade Meat Sauce

This dish turned out well. It is a very simple turkey bolognese sauce. You can use whatever ground meat you'd like. 

Ingredients


2 pounds of ground turkey
1 medium onion, chopped (I omitted)
4 cloves garlic, minced
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 tablespoons sugar (I omitted)
1½ teaspoons dried basil
1 teaspoon Italian seasoning
½ teaspoon fennel seeds
Salt and freshly ground black pepper

Directions

1. In a large saucepan or pot, cook turkey and onion until mostly browned
2. Stir in the garlic until fragrant
3. Stir in the crushed tomatoes, tomato sauce, tomato paste, sugar, basil, Italian seasoning, fennel, 1 tablespoon salt, and ¼ teaspoon pepper
4. Simmer uncovered for 30 minutes, stirring occasionally

Loaded Nacho Meatballs

These were good. I would make them again. It's fun to make meatballs in other ways than just Italian.

Ingredients

For the Meatballs:
1lb. ground turkey
1 egg
¼ cup almond flour
½ tsp salt
¼ tsp ground black pepper
½ cup sharp cheddar cheese, shredded (I did not put the cheese inside)
1 tsp ground cumin
1 tsp garlic powder
3 Tbsp prepared salsa 

For the Topping:
¼ cup prepared salsa 
¼ cup sharp cheddar cheese, shredded
Jalapeno slices
Avocado

Directions

1. Combine all of the meatball ingredients in a medium bowl and mix thoroughly
2. Form into meatballs and saute in a large pan until golden brown and cooked through
3. Arrange the meatballs in a casserole dish and top each with salsa and shredded cheddar cheese
4. Place in the oven or broiler for about 2-3 minutes or until the cheese is melted
5. Remove from the oven, top each meatball with whatever you'd like

Slow Cooker Bourbon Chicken

VERY DELICIOUS! I really enjoyed this. I bought skin-on, bone-in chicken thighs because I love the skin. The meat fell right off the bone. I will be making this again.

Ingredients

1 1/2lb boneless, skinless chicken thighs 
1/4 cup low sodium GF tamari or GF soy sauce
1/4 cup apple juice 
2 tablespoons tomato paste
1 tablespoon apple cider vinegar
1 tablespoon sugar
2 cloves garlic, minced
1 teaspoon ginger
, minced
Directions

1. In a medium bowl, whisk together all ingredients except the chicken

2. Place the chicken in the slow cooker, then pour sauce over. Move the chicken around so that it is covered with sauce 

3. Cook on high for 4-6 hours

4. Remove chicken from slow cooker and slice (I did not do this, I kept them whole)

5. Pour the sauce into a saucepan and simmer over low heat to reduce it until thickened, or mix a little cornstarch or arrowroot starch with water, then stir into sauce and cook, stirring constantly, until thickened

6. Pour the remaining sauce over the chicken
